A top-class wine, red and pulsating life like blood ("eme" in Greek): this is our project dedicated to people with real passion. It has a magnificent blend, so uniquely delightful, an elegance achieved from the wise and balanced blending of wines processed in pureness from the grapes of the Aglianico and other vine varietals grown with real passion in our “Bosco Faiano” vineyards. The uniqueness of these clones helps to express the most original and authentic identity of our long and appealing of our family-run winemaking establishment.

Emè is a unique wine, a concentrated of grapes, a distillate of history. The strength of the Aglianico merges with the softness of other grapes, the wise choice of woods creates evocative olfactory notes from ripe fruits to jam, from licorice to leather, from Mediterranean herbs and vanilla. To better appreciate the features it is recommended to be served at a temperature of 14-16 ° C after having done oxygenate for at least 1/4 of an hour.
Sautè garlic and a pinch of hot pepper in a pan and when the garlic is golden brown add the rabbit, cut into small pieces. Cook with the addition of white wine to be evaporated. Add tomatoes and basil and finish cooking for about 20 minutes.
The location is hilly (altitude of 350 m), looking out over the valley of the Calore River in the locality of Bosco Faiano, Torre le Nocelle (Avellino). The nature of the soil is clay-like and chalky.
Aglianico and other vines re-grafted from the farm's clones (Merlot, Cabernet, Sangiovese, Montepulciano, ecc). Cultivated through vertical trellises and the classic version in canopy form. Low yields of 55 – 60 ql. per hectare.
Hand-harvested with the selection of the best bunches in the second part of October, other vines slightly overripe. After the grapes have been de-stemmed, the must ferments on their peelings for about 20 days under a controlled temperature.
In wooden vats of different sizes (25 hl - 5,5 hl - 2,5 hl) and origins for a period of 12 - 18 months according to the wine. Refining occurs in bottles for another 6-8 months.
This wine is very special and represents our centennial history of winemakers. L'Emè is a unique blend obtained by three red grapes processing and ripening in purity which were selected from our family with time and experience; this wine it's made by the strength and longevity of the Aglianico that it's wonderfully supported by the fruity power and the fresh liveliness of other grapes. These last varieties, in fact, have been bred for years in the family's vineyard without commercial purposes, but for the sake of experiment and confront our terroir. They are the result of the selection made in the '50s on various plants brought from France as a gift from our wine commercial agents at that time. The exceptional quality of wines produced from these plants led us, in the 2006, to stake on revival of this historic project based on the same early spirit. Through the recovery in our vineyard of the historic plants, lasted several years, and cultivating them with low yield (only 40 quintals/ha) every year we get wonderful grapes. In our cellar, we limit enological operations at minimum to preserve at best these excellent grapes at our disposal. During the maturation frequent tastings and a selection manic permit us to express a great personality in The I Capitani red wine.
This wine is produced in addition to the classic 750 ml bottle also in special sizes magnum 3 liter and 5 liter, packaged in limited edition, numbered bottles, in boxes of solid wood
