Greco is a beautiful vine that reveals unequivocally the terroir of production. Flavor and minerality combined with a pleasant freshness makes it perfect for an aperitif or to match fish or shellfish, grilled or sauteed. The more traditional combination it's with pasta with cabbage and bland sea bass, very simple dishes, of which incredibly enhances the flavor. With the refinement in the bottle becomes fantastic with tipical italian large noodle egg pasta (named pappardelle) or risotto with mushrooms as well as soft cheeses do not mature.
Clean squids taking care not to break the pouches. Cut the tentacles into small pieces and fry in oil for a few minutes; then with already fried zucchinis prepare a mixture by adding eggs, grated cheese, cubed scomorza, mint and bread (previously soaked in milk). Greco di Tufo was the first wine from Campania to establish itself seriously on the international stage and to spread the name of the Irpinia wine area for its excellent wines. It's without any doubt the oldest vine of Irpinia, imported from the Greek region of Thessaly. The confirmation of the ancient origin is given by the discovery of a fresco in Pompeii dating back to the first century BC where he explicitly mentions the "Greco wine". Cultivation of the greco vine was spread initially on the slopes of Vesuvius and later in inland areas more suited to viticulture. In the province of Avellino greco vine has its highest expression in "Greco di Tufo" DOCG wine. The name Tufo is taken from the town located at the center of the little production area made by 8 municipalities. Tufo, in turn, owes its name to the soil-pyroclastic volcanic tuff of origin from the characteristic yellow color that give the wine its famous minerality.
